Our fields are full of clover, but finding a four-leaf one takes time and persistence.

You could say the same of our Four Leaf Clover in the field of many cheddars.

Inspired by classic English cheddar making, we press our cheddar curds into a large-format truckle.

Truckle is the English word for a large barrel shape. Our truckles are a wheel ten inches in diameter and twelve inches tall.

After twenty-four hours of pressing, we soaked some muslin cloth in lard from our local butcher shop. We use the cloth to wrap the truckle. Then each truckle goes back in the press for another twenty-four hours.

The cloth bandage protects the cheese’s rind as it ages six to eight months.

The larger format maintains more moisture, giving a creaminess to the texture, while still providing the sweet pineapple notes of our aged cheddar.

As a result of the longer maturation, these wheels are full of flavor. Some even develop calcium crystals that are a sign of high-quality aged cheese.

According to one chef, our aged Cheddar is world-class and as good as any cheddar he’s imported from England.

    When I saw this cheese I was thrilled. I’m a life long health food nut. Wow, raw milk cheese from grass fed cows. I was in Pittsburgh PA., and out of town. I bought the wheel, and Deb bought a wedge of the blue cheese. Deb didn’t like the price, she is very frugal, but she went along. We cut it up when we got home, and sampled both. I asked her if she still thought it was expensive, she said no, that it was well worth the price for the quality and taste. The cheddar had a deep rich taste. The texture was crumbly. We cut the blue cheese and wished we had bought more. So creamy and tasty. I haven’t had cheese this good for fifty years when I was in the service and in the Mediterranean. Clover creek knows what they are doing.

    Oh, I do something that may not be a good thing. I decide the cheese up and freeze it. Cheese freezes great, and I can’t tell the difference.
