We have found we need to set our prices to reflect the current economic situation and our family’s business values. Our cheese is sold at the cost of our production and, therefore, cannot offer large volume discounts. We appreciate customers who pay cash for the cheese they order, or at least communicate when they will be able to pay in a timely manner.

Through experience, we have realized that we prefer to work with small businesses who want to sell a healthy product, and build relationships with other like-minded people. Though we want to offer the same low prices to everyone, we specifically want to reward customers who pay promptly. We prefer customers that consistently order smaller amounts of cheese because that is the way we produce our high-quality farmstead cheese, cellar aging each wheel, hand turning, scrubbing, and individually packaging each wheel at the optimum time.

The other consideration in our pricing change is new regulations and “hidden taxation.” We are experiencing the Food and Drug Administration (FDA) and the  Pa Department of Agriculture new rules,  hosting 8 inspectors instead of 2, increasing paperwork, and are paying new licensing and permit fees this year. We are also paying additional fees to the Pa Milk Marketing Board and the National Dairy Board.

We had a meeting with our accountant at the end of June 2016. He told us that we are currently wholesaling our cheese below production cost. Eventually, we may have to increase our pricing across all of our cheese, but as of July 1, 2016, we will be adding two dollars per pound to the wholesale price of any cheese aged over 12 months. Our market prices will remain the same. Currently, Royer Mountain, Four Leaf Clover, and Uncle Joe’s are the only cheeses that are higher in price.

The cost of producing cheese, delivering it to customers, and shipping has also gone up. The following prices attempt to address some of these changes.

Payment Discount on Delivery

We will be offering a 10% cash discount for cheese paid before shipping or at delivery. Payment by credit card when ordering earns a 5% discount.
