2 1/2 cups potatoes cubed 1/8 teaspoon pepper
1 rib celery, diced 2 cups milk
1/3 cup onion, chopped 4 tablespoons flour
1/4 cup water 3 tablespoons butter
1 teaspoon parsley flakes 2 cups Clover Creek Cheese Cellar Cheddar Cheese

In a 2 quart casserole dish, combine potatoes, celery, onion, water, and seasonings. Cover. Microwave on high for 8 to 10 minutes or until vegetables are tender. Stir halfway through the cooking time. Mix 1/4 cup of milk with the flour until smooth. Slowly stir the flour mixture into the remaining milk, butter, and potato mixture. Microwave on high, uncovered, for five minutes. Stir and add cheese. Microwave on high for three more minutes until cheese is melted and mixture has thickened.
Makes four cups.
