Grass-based Raw Milk
Not sure what all the hype is about raw milk? First and foremost for most of us is the vast difference in the taste and quality of the product. Milk you purchase in the store has been pasteurized, homogenized (to prevent the cream from rising to the top of the jug), and standardized (the cream is removed to make the fat content exactly the same, lower than that in raw milk). All of this, plus shipping, bottling, and storage takes considerable time, contributing to even more lost flavor and freshness. The fresh raw milk you purchase at Clover Creek Cheese Cellar is milked from the cows every day, filtered, and stored in a cooled stainless steel tank for no more than 36 hours. The milk is not processed in any way before you take it home. We believe that this contributes to a superior product that is both better for you and better tasting.
Some people are concerned about the safety of raw milk because it is not pasteurized. Raw milk is a safe food. The certification process is very rigorous with strict standards overseen by our local Dairyside veterinarians and the Pennsylvania Department of Agriculture sanitarian. We are constantly monitored for cleanliness of equipment, health of the cows, and milk handling procedures. At Clover Creek Cheese Cellar we gladly meet and even exceed these standards, as we also drink our milk and want to make the best and safest product possible. Look at the numbers: our milk consistently has had too few bacteria count per milliliter. Raw milk can not be sold if it has more than 10,000 bacteria/ml. Pasteurized milk can be sold at 70,000 bacteria/ml. Isn't it safer to start with clean pure, raw milk? As of July 27th, 2010, we have a raw milk jugging
system licensed
by the Pennsylvania Department of Agriculture and the Pennsylvania
Milk Marketing Board. We will continue to have filled
jugs in our refrigerator at the farm. We try to keep at least eight jugs
in there at all times, but if you would like to pick up more, please
let us know
before coming. You may pick up these jugs at any time. The cost of our
raw milk is $4.00/gallon when picked up at the farm. The cost at market
is $5.00/gallon and $3.00/half gallon. We will have it available at the
following markets during the summer:
Boalsburg Farmers’ Market on Tuesday
from 2pm-6pm.
Ligonier Farmers’ Market on Saturdays from 8am-12pm.
