Ingredients
2 cups elbow macaroni
2 large potatoes, cubed or 1 lb of small potatoes, quartered
3oz Royer Mountain cheese, grated
3oz Tussey Mountain cheese, grated
4-6 slices of thick-cut bacon, cut into ¼-inch-wide strips
2 onions, halved and thinly sliced
1 cup heavy cream
Salt and pepper to taste
Chives for garnish
Directions
- Bring a large pot of salted water to boil.
- Add potatoes and cook for 5 minutes.
- Add macaroni to the same pot and cook until al dente.
- While pasta cooks, crisp bacon in a separate skillet.
- Once the bacon is crispy, move to a paper-towel-lined plate to drain and cool. Remove all but 2 tablespoons of the fat from the pan, and add the onions. Season with salt, and cook, stirring regularly until soft and golden, about 30 minutes. Set aside.
- Drain pasta and potatoes, reserving 1/2 cup of cooking water.
- Return pasta to pot and add heavy cream, stirring until the cream begins to warm.
- Add the shredded cheese and stir until the cheese is melted and creamy.
- Serve topped with caramelized onions, crispy bacon bits, and chopped chives, and watch your family smile.
