We decided to embrace the “creek” part of our company name as we chose a name for our whole milk Swiss style. The smooth firm texture of this cheese reminds us of a wide lazy river. The most famous river in central Pennsylvania is the Susquehanna. Enjoy the subtle nutty flavors of this delicious cheese as it winds its way across your palate. Watch for a surprise “eye” or two as you cut into your wedge. These holes found in Swiss cheeses are produced when the bacteria in the cheese produce gas bubbles that push the elastic curds out of the way during the aging process.
