We’ve renewed an old friendship by stopping at the Grandview Vineyard. They have a beautiful winery in Mount Joy, Pennsylvania and the owners (retired veterinarians) employed Dave when he first graduated from college. They started selling our cheese at the winery and asked us to complement our cheese with their Cabernet Sauvignon. We take a wheel of our Moshannon and marinate it in the wine for 5-7 days to create our Winemaker’s Select. The result has a delicious mixture of wine and tangy manchego goodness. See if you agree with the winemaker’s selection of complimentary flavors.
