Royer Mountain is my award-winning alpine cheese, made in the style of Gruyère. It’s smooth, nutty, and melts beautifully. Slice it for your cheese board, or melt it over a grilled cheese sandwich. It took third place at the Pennsylvania Farm Show, and I think you’ll taste why.
Four Leaf Clover is my clothbound cheddar. I wrap each wheel in cloth and let it age in my cellar for months. The cheddar has a sweeter, smoother taste than you might expect. Serve it with crisp apple slices or crusty bread.
Galen’s Reserve is my gouda, aged for a full year. It’s creamy, rich, and full of flavor. This is the cheese people reach for twice.
Made slowly, by hand
Every wheel starts with raw milk from my family’s cows. They graze on fresh pasture all summer. I stir the vats by hand, and my team and I turn each wheel by hand too.
When the time is right, I cut and vacuum-pack each cheese. It stays fresh until you’re ready to enjoy it.
